Beer Braised Chicken Breasts with Baby mixed Vegetables.
Boneless, Skinless, Chicken Breasts with Mixed Baby Vegetables braised in Guiness.
The beer gives a touch of bitterness and blends the tastes together nicely.
2 boneless, skinless, chicken breasts.
1 medium onion, sliced.
1 bag frozen baby vegetables. ( Carrots, peas, carrots, and corn).
1 tblspn olive oil.
1 tspn each, poultry seasoning, hot mustard powder, and coarse ground black pepper.
1 341 ml bottle beer. (Guiness works very well for this.)
Place onion slices in the bottom of an 8" x 12" baking pan.
Put the chicken on top of the onion and then drizzel the olive oil over the top of them.
Sprinkle the seasonings over top so they cling to the olive oil.
Fill the pan with the veggies, trying not to cover the chicken.
Add the beer and then seal the pan with tin foil.
Bake at 350 degrees for 1 1/2 hours.
You can thicken the pan juices for gravy if desired.
I had this with some brown rice and a St. Ambroise Oatmeal Stout.
