Hoppy brews in the summer and malty in the winter.
BeerBabes Beef Stew
Comfort food for those chilly days ahead.
2 pounds stewing beef, cubed.
1 cup of coarsely chopped onion.
3 cloves of garlic, chopped.
1 large carrot, chopped.
4 large potatoes, diced.
1 stalk of celery, chopped.
optional: 1 peeled and chopped parsnip,
also optional: 1/2 cup of chopped turnip.
12 ounce bottle of dark ale or stout.
flour seasoned with salt, pepper, and seasonings that you like, (I use cayenne pepper, paprika, maybe some chili powder).
sprig of parsley. Also optional.
1 tablespoon of oil.
Add oil to dutch oven and cook onions until opaque, add garlic until slightly golden. Remove.
On medium high heat placed seasoned, flour dredged beef cubes into dutch oven and brown.
Re-add the onion and garlic, turn temperature down to simmer, add ale or stout.
Simmer for about 2 hours.
Taste and season to your liking.
Add carrots, potatoes, celery and parsley.
Continue simmering until vegetables are cooked.
Correct seasonings if needed.
Serve with crusty bread or biscuits.
