Devoids' Leftover Turkey Sandwich
When I make this recipe I usually triple all the ingredients so I can eat this for a couple of days. I love turkey with cranberries. I would love to feed this to my partner 'Nemsis'. Cranberries make his ear lobes itch. (-:
Okay folks this is a sandwich, so I didn't use precise measurements on most of this.
Ingredients:
About a 1/4 pound of turkey breast. (I don't use dark meat because drum sticks are eaten in front of the t.v. watching football).
1 table spoon of mayonnaise.
2 table spoons of whole berry cranberry sauce.
a bit of chopped onion.
a bit of chopped celery.
1/8 teaspoon of dry mustard.
salt and pepper to taste.
Chop turkey into very small pieces.
In a bowl mix all other ingredients and then add chopped turkey.
Thats it folks.
I put it on Munich style light rye bread because it doesn't get soggy as fast as regular sandwich bread. You could use a crusty bun as well.
Now because of the cranberry sauce the mix comes out a pink color. If this throws you off leave out the cranberry sauce and add it to your sandwich before eating.
This recipe makes a great dip if you pulse the turkey in a blender to really chop it fine.
