Dieu Du Ciel - Dernière Volonté

Cloudy light orange colour lots of sediment and a clumpy white head and really thick lace clinging to the side of the glass.
Citrus and tropical fruit with some spice are nice aromas in this one.
Full, rich creamy mouth feel. My oh my this is starting out good.
As I get ready to take my second sip I noticed a clump of head, foam or whatever in the middle of my drink. Neat.
Lots of grapefruit citrus kind of bitterness at the start that coats the tongue and leaves a nice dryness that begs for more. I just can't find the malt in this one. Still excellent but not as complex or interesting as their other offerings.

Dieu Du Ciel - Dernière Volonté

A cloudy amber/yellow colour with a very full white head, the head becomes very rocky quite quickly and begins to reduce but never seems to completely leave.
The aroma is citrus (grapefruit) and cloves. A hint of ginger and banana come through as well.
Taste is toward the sour side and very full. A rich creamy feel with a very dry finish including hints of pine and cedar.
The bitter dryness is very pronounced and pleasant. This one strikes me as an appetizer. The dry finish and citrus flavour are building an appetite already.
There is a nice light biscuit and honey base for the bright hop tastes to ride on, and the blend of tastes is wonderful. Dinner is an hour away and I am HUNGRY!
I wish I could get this more often. This is the first beer from "Dieu Du Ciel" that I have been able to beg (and I did!). I have heard many good things about them and, so far, everything I heard is right. If plans go well I will be taking a trip through Quebec next summer and I intend to grab as many samples from "Dieu Du Ciel" as I can carry.
