Dunkel
Dunkel, which simply means "dark", is the dark lager which is traditional to Germany, or at least to the Munich area of Germany. As Porter is to Britain, Dunkel is to Munich, it is produced using the dark roasted malts which were common before coke fired ovens made light malts possible. Dunkels are brewed using a "decoction" brewing process which means that the mash is heated and then smaller portions of it are removed, brought to boiling and then added back to the main kettle. This helps prevent scorching or burning and helps preserve the lighter colours of the beer. The process helps to add to the complexity of the beer and produces richer and deeper flavours
This style is a full bodied rich looking beer, very dark red coloured which almost makes them appear thick. The taste is much fuller than light coloured lagers with a lot of malt base and light to moderate bitterness from the hops which should balance out the sweetness.
You will often find flavours of honey, berries, dough or biscuit, coffee, and chocolate.
They usually come in around 4.5% to 6% ABV.
You may also find Hefe-Weisse Dunkel or Dunkel weizen which are names for dark wheat beers. they will usually be a bit more fruity and sweet than a stright Hefe-Weisse.
