Hearty Beef n' Beer stew
For a cold weather meal try this hearty Beef stew, cooked after marinading the beef in Guiness.
The marinade makes the beef tender and flavourfull while sourcream makes the whole thing a hearty meal.
The Marinade:
5 lb. Stewing beef cut into 1" cubes.
2 tblsp coarse ground black pepper.
1 tblsp "Montreal Steak Spice".
1 tblsp dry mustard powder.
2 medium onions, coarsly chopped.
2 cloves garlic, finely chopped.
1/4 tsp tobasco sauce.
1 pkg. French onion soup mix.
1/4 cup vinegar.
2 341 ml bottles "Guiness".
Combine all the above in a large stew pot and marinate overnight.
When ready to begin cooking add 450 ml beef broth, (canned is fine).
Bring to a boil, then reduce heat and simmer for 2 hr.
Now add:
1 lb turnip.
1 lb carrots. (I used peeled baby carrots, but suit yourself).
2 1/2 to 3 lb peeled potatoes cut into 1" cubes.
Simmer until potatoes and turnips are tender. (Apx. 1 hr.).
Add 2 cups sour cream.
Then:
Thicken with 3/4 cup flour mixed with guiness to make a thin paste.
I had this with some fresh sourdough bread and a strong flavoured beer. In my case I chose a "Maudite" from Unibroue.
