A dark red/brown colour with a fairly thin not quite white head.
It smells a bit fruity and a bit like rye whiskey.
It tastes a lot like it smells, some fruit like raisins or dates and some rye whiskey tastes. It feels quite thick and goes down really well.
I like this beer. The fruit tastes are quite nice.
I don't mind the rye tastes either. It does leave a dry spot on my tongue though.

Innis & Gunn Canadian Cask
There is a full and slightly off white head on this beer, The colour is a deep amber/red and very attractive in the glass.
A light alcohol aroma hit me as soon as I started to pour this one, In the glass there are aromas of fruit, alcohol and an oaky tannin smell.
The feel is quite full, not watery, a bit creamy.
Tastes are quite different from what I have come to expect from Innis & Gunn. There is a lot more fruit flavour in this beer, mostly raisin or date with a touch of green apple and citrus.
The alcohol comes through in the taste, along with the usual Innis & Gunn caramel taste. In this beer the caramel is much more subdued. The rye and oak flavours seem to come through more in the finish than in the middle of this brew. There is just enough hops to keep this from being cloying and I am glad to say that this particular blend does not come across as nearly as sweet as some of their others do.
A while after you have swallowed there is a tannic acid drying tingle left on the tongue. It is well under control and not offensive at all. The same sort of feel you get from some very dry red wines.
I like this a lot. Of the several Innis & Gunn beers I have tried this is my favourite. The sweetness I usually find in their beers is finally balanced in this one and the whole combination just works. At least for my taste.

Innis & Gunn Canadian Cask
Dark rusty red color with a thin white head.
Fruit and alcohol are predominant in the aromas.
Very full mouth feel. Very pleasant I must say.
Quite sweet yet not cloyingly sweet. Caramel and citrus are the main tastes with a bit of oak and of course a hint of alcohol. I like this very much. Pity the price is so high.
