Johns' Left Over Turkey Chili
This is one of those very simple but tasty recipes that I love to make.
Preparation is more time consuming than the actual cooking. Gotta love it.
1/2 cup chopped onion.
2 cloves garlic, minced.
1 Tbsp vegetable oil.
1 Tbsp chili powder.
1 Tbsp crushed chilies.
1 tsp cumin seeds, (lightly toasted).
1 tsp sugar.
1/2 cup sliced mushrooms.
1/2 cup chopped celery.
1/2 green pepper, chopped.
1 Tbsp of tomato paste.
1 (28 oz) can tomatoes, undrained.
1 (15 oz) can red kidney beans drained.
3 cups chopped cooked turkey breast.
1 can tomato soup.
*All of these ingredients are to my taste. Add or subtract to your own taste by all means.
In a dutch oven or other large pot cook onions and garlic in oil until light golden color.
Add all the rest of the ingredients and simmer uncovered until celery is only slightly crunchy.
I like this with a crusty bread and a large glass of porter or stout.
