Pot Roast with Beer
A good way to make a very cheap cut
of meat into a tender gourmet meal.
Outside round roast, or your choice of cheap cut.
1 1/2 bottles of beer
1 package of dry onion soup mix
3 cloves of garlic, crushed, (if you want more or less go for it.)
oil to sear roast.
salt and pepper to taste.
Heat oil in heavy pot, and sear roast on all sides at high heat.
Turn heat to low and add onion soup mix on top of roast.
Add 1 bottle of beer to make a liquid wash around the roast.
Add garlic.
salt and pepper to taste
Cover with lid and simmer for the rest of the afternoon, while the guys try to stay up-right.
Gravy: 1/2 hour before roast is done add the other 1/2 beer. Thicken with your favorite thickener.
Yorkshire pudding goes really good with this recipe because it generally makes lots of good gravy.
