Unibroue - Maudite

A thick and long lasting tan coloured head. The beer is slightly cloudy and a dark chestnut colour.
It smells like cloves and bubblegum.
The taste is so full, I love this beer. There is lots of raisin and date tastes along with ginger and cloves.
I can taste a little of the bubblegum that I smelled but it seems more like vanilla or banana in the taste.
There is a fairly dry finish which is quite nice.
This could be one of my favorite beers, at least so far.

Unibroue - Maudite

Which means "the damned one"
It pours a dark copper colour which is slightly cloudy, with a full slightly tan coloured head which reduces to a lot of lace.
This beer is brewed on lees which means that the final fermentation is in the bottle. This gives the beer it's higher alcohol content and it's slightly cloudy appearance.
It also gives the beer a rich collection of tastes and additional carbonation.
The aroma is of citrus, malt, cloves and alcohol.
It's taste is rich and creamy with hints of chocolate and vanilla. There is some citrus taste and a bit of cloves.
You can taste the alcohol but it is muted and not at all overpowering.
This is a very smooth blend, the creamy chocolate and vanilla taste lingers with just a bit of a tingle on your tongue and a hint of citrus and cloves.

I will buy this again often.



I hate to be a nit picker, well maybe I don't. Anyways the comment from your beer review is not correct. "This beer is brewed on lees which means that the final fermentation is in the bottle. This gives the beer it's higher alcohol content and it's slightly cloudy appearance." Most of the Unibroue beers are brewed on lees, or more properly "bottle conditioned". When the finished beer is bottled, a small amount of fresh yeast and sugar (or beer wort) is added to the bottle. The yeast will then ferment the added sugar, producing CO2 (which carbonates the beer), a small amount of alcohol, and the sediment in the bottle. Bottle conditioned beers are usually carbonated entirely by the natural action of the yeast, as opposed to filtered beers which are carbonated using high pressure gas injection. The amount of alcohol produced from the bottle conditioning process is very minuscule. The high alcohol content in this beer (or any other) is from the high sugar content of the wort (beer before it is fermented) from using more malt and or sugar in the initial brewing process, which the yeast in the primary fermentation then consumes to produce alcohol and CO2. Another advantage of bottle conditioned beer is the beer will keep for quite a long time if properly stored (cool and dark).

You are correct in that brewing "On Lees" (which is mostly a wine term used by a few brewers as well, it means that the beer or wine undergoes an extra fermentation after it is bottled and before it is sold) may not add too much to the alcohol content of Maudite. Without knowing what the initial specific gravity was it is impossible to say how much additional alcohol was created. It most certainly adds to the taste and texture of the beer, I should have been a bit more careful in my wording. The increase in alcohol from finishing "on lees" depends on how much extra sugar is added to the bottle and how much yeast and how long the whole thing is allowed to age (to a point). The risk is too much CO2 and exploding bottles. It's why brewing is such an art, and Unibroue does it as well as anyone. By the way, I agree wholeheartedly with your sig!
