BEER is GOOD!
A light comfort food recipe which has been in my family for years.
1 28 oz. (796ml) can of diced tomatoes
1 package of regular wieners (12) cut in 1/2 inch pieces
4 medium potatoes, dice
1/2 green pepper, chopped
1 onion chopped
herbs to taste. (I prefer a bit of basil and parsley), but you do as you like
chili flakes to taste (not necessary, but gives a nice bite)
salt and pepper to taste
1 table spoon olive oil
you can add a bit of sugar if you like to cut the acidity of the tomatoes.
brown the potatoes in olive oil
add onions and cook till opaque
add tomatoes, wieners, green pepper, herbs and spices
cook on medium heat until potatoes are soft (about 1/2 hour)
serve with a nice crusty bread (French or Italian)
a dark malty beer is my preference for this recipe.
